• Herbed Fish with Tomatoes

     If you want a delicious, nutritious, healthy, clean, easy, quick dinner that will impress then try this! So flavorful and super yummy! This took no longer than 30 minutes to prepare…gotta love that! I served with cauliflower rice that I mixed with sautéed chopped kale seasoned with a little curry powder & cumin. Those tomatoes, OMG,  they were bursting with juiciness! A great combination of flavors in this din, a real winner of a meal! I hope you try it!

     Herbed Fish with Tomatoes


    • 3 pieces fish (4 oz each) halibut or salmon or any combination is good! (I have the fish from Sizzlefish in my freezer and it makes it so easy and the quality is amazing, highly recommend!
    • 1 tablespoon olive oil
    • 1 teaspoon minced garlic
    • 8 oz grape tomatoes
    • Pepper, a few grinds
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • Juice from 1/2 lemon
    • Chiliflakes (optional)


    I used a cast iron pan by Lodge (LOVE!) but any pan that can go under broiler is good,  just be sure to wear a glove when handling the pan!
    Preheat broiler.
    Add oil to pan over medium heat.
    Add tomatoes & garlic and cook for about 3-5 min.
    If need be add a bit more oil.
    Place fish in same pan skin side down.
    Sprinkle fish with pepper, oregano and thyme and continue to cook for 3-4 minutes.
    Place pan under broiler for 3-5 min
    Serve and enJOY!
