• Flourless Chocolate Chip Walnut Cranberry Cookies

    I made these a while back in December and when I did so I didn’t measure the ingredients and have been meaning to recreate them since they were so yummy! The day of the Blizzard was the perfect day to do so especially since I had a few almost black bananas (sweetest & best for baking) sitting and staring me in the face! One more day and they would have been in the garbage. These cookies are not only flour free but have no added sugar or eggs! They are super healthy and I love the flavor combo of the chocolate, walnut and cranberry. If you don’t like any of the add ins, just leave them out and put more of what you do like! I freeze leftovers and yes of course I eat them straight out of the fridge! These also make a great breakfast cookie….just think how good they’d be with a glob of nut butter on top!


    Flourless Chocolate Chip Walnut Cranberry Cookies


    • 3 large over ripe bananas, mashed
    • 1 cup almond meal (Trader Joes)
    • 1 cup quick cooking steel cut oats (Bobs Red Mill)
    • 1 teaspoon baking powder
    • 1 tablespoon cinnamon
    • 1/3 cup dried cranberries
    • 1/3 cup chocolate chips (Enjoy Lifes are my go to)
    • 1/3 cup chopped walnuts


    Preheat oven to 350 degrees

    Place mashed bananas in bowl. Add almond meal, oats, baking powder and cinnamon and mix well.

    Add cranberries, nuts and chips and mix until incorporated.

    Using a cookie or ice-cream scoop, spoon batter onto parchment lined baking sheet, about 13 cookie.

    Press down gently with your fingers to form round cookie.

    Bake for 30-40 minutes.

    If you like soft cookies remove at 30 minutes and if you like them a bit firmer (like me) leave in for 40 minutes.

    Allow to cool on wire rack.

    enJOY and freeze whats left when fully cooled.
