• Turkey Lentil Bolognese

    I’m all about easy and this one literally came together in 20 minutes! Not only was super duper easy, it was tasty and healthy too! That’s a win win in my book! I had all the ingredients in my fridge and I literally threw it all together in a pan and BOOM! As far as serving suggestions you can’t go wrong over pasta or zucchini noodles but the request here was brown rice and spinach and BOOM again, just add some rice and spinach to a bowl and load with heaps of the bolognese sauce and dive in! By the way Melissa’s Produce  steamed lentils and other products are so versatile. I love them in salads and soups too!

    Turkey Lentil Bolognese

    Ingredients:

    • 2 tablespoons olive oil
    • 2 lbs. ground turkey
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • salt & pepper to taste
    • 6 oz. tomato paste
    • 24 oz jar marinara sauce (I used Raos)
    • 9 oz package steamed lentils  (Melissa’s Produce)
    • Optional serving suggestions:1 lb. pasta, zucchini noodles, fresh spinach, chili flakes for a lil kick & parmesan cheese to sprinkle on top because cheese makes everything better!

    Directions:

    Heat large saucepan with olive oil over medium high heat.
    Add turkey, season with spices and continue to break up the turkey with a wooden spoon until no longer pink.
    Reduce heat to medium.
    Add tomato paste and mix until turkey is well coated.
    Add marinara and lentils and reduce heat and simmer for 10-15 minutes.
    Serve over your favorite pasta, brown rice, zucchini noodles or spinach and sprinkle with a little parm!
