I have to be honest with you, I never intended to post this recipe as it’s something I just threw together, however it’s just too good not to share. Fantastic for all you vegetarians! Every week I like to roast veggies (usually Sunday or Monday) so that I have them ready for lunch (or din) all week and I strongly suggest you do the same. Prepping ahead of time is not only a time saver but when you have food ready to go it diminishes the need to snack on not so healthy stuff! Having all the ingredients ready to go literally made this lunch happen in 10 minutes! Try it! You just might thank me!
Cauliflower-Rice Chickpea Curry Hash
1 tablespoon oil (olive, coconut or avocado are good too)
8 oz. cauliflower crumbles
8 oz. chickpeas, rinsed and drained
1/4 cup roasted butternut squash
1/4 cup roasted sweet potato
1/4 cup roasted zucchini
1/4 cup sautéed mushrooms
1 teaspoon curry powder
1 teaspoon cumin
pepper to taste
chilifakes, a small sprinkle to taste
Place 1/2 tablespoon oil in pan over medium heat. Add chickpeas and saute for 2 minutes.
Add the rest of the oil.
Add cauliflower crumbles and cook for 2-3 minutes.
Sprinkle with curry, cumin and pepper.
Add roasted vegetables and cook until heated through.
