• Healthy Crock Pot Chicken Soup


    This soup is the perfect soup to make if you don’t have time or work and are gone all day…”Set it and forget it!” And to boot it tastes so freaking good! I am telling you, you must make this stat!! It’s similar to my skinny chicken soup but just think that all you have to do for this one is put everything in the crockpot and walk away for 6 hours!! I, of course will be adding zucchini noodles to mine when I eat it! Feel free to add noodles, rice or matzah balls too! Healthy and delicious all in one bowl and husband approved! (Then again he likes most everything I make lol)













     Healthy Crock Pot Chicken Soup


    • 2 lbs boneless and skinless chicken breast (3 large breasts)
    • 2-3 large carrots, sliced
    • 2-3 large celery stalks, sliced
    • 1 medium onion, chopped
    • 2-3 cloves garlic, minced
    • 1-2 is tablespoons olive oil
    • 1 bay leaf
    • 1/2 teaspoon dried thyme
    • 3 tablespoons fresh dill (I love dill so I add a bunch!)
    • 8 cups low sodium chicken broth
    • Salt & pepper to taste (about 1/4-1/2 teaspoon each)
    • Optional add-ins: egg noodles, zuchinni noodles, matzah balls, rice, cauliflower rice


    Drizzle olive oil in the bottom of slow cooker.
    Add chicken breasts.
    Add carrots, celery, onion, garlic, bay leaf salt, pepper and thyme.
    Add broth.
    Cover and cook on low for 6 hours.
    Remove bay leaf and chicken.
    Shred or chunk chicken and return to slow cooker along with the dill for an additional 30 minutes.
    If you are using noodles pre- cook them and add them to bowls before ladleing soup into them.

    * I freeze the soup in portioned containers for easy lunch or dinners. Just remove from the freezer the night before or in the morning.
