• Baked Carrot Parmesan Fries

    If you’ve been following me on instagram you may have noticed I have been on a “roasting veggies” kick, hence these carrots were born! You guys must make these, beyond easy, a great snack or side dish and freaking delish!!! Perfect for Thanksgiving too! I am obsessed with parmesan cheese and clearly in my world it makes everything taste better! If you don’t eat cheese, just leave it off but I’m telling you it’s worth the dive into the parmesan pool! I like to roast my veggies at the beginning of the week and then put them in my salads or bowls for lunch…much easier when you have them all ready! Hope you enJOY them! Let me know!img_7029

    Baked Carrot Parmesan Fries

    Ingredients:

    • 1 lb.organic carrots
    • 1 tablespoon oil (avocado, coconut, olive, even truffle for a fancier taste)
    • 1/4 cup parmesan cheese
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon pepper
    • 1/2 teaspoon salt
    • 1 tablespoon dried parsley

     

    Directions:

    Preheat oven to 400 degrees

    Cut ends off carrots and slice into quarters

    Place carrots in a shallow dish and drizzle with oil

    Sprinkle the rest of the ingredients on top and mix well with your hands until all the carrots are coated

    Roast in oven for about 40 minutes, until golden brown
