Guys this soup literally took 25 minutes to make! Now it does not get easier than this! The minute there’s a slight chill in the air, I go into soup mode so here goes! This one is super healthy and absolutley delish! If you are adding the sausage, do not add a lot of salt as the sausage gives it a nice salty bite! The cheese just makes everything better and a big ol’ hunk of crusty whole grain bread would certainly be the piece de resistance!
Kale & White Bean Soup with or without Chicken Sausage
2 tablespoons olive oil
10 oz. chopped Kale (Trader Joes has it in a bag)
1 medium onion, chopped
1 clove garlic, minsed
2 14.5oz. cans cannellini beans, rinsed and drained
4 cups chicken stock or broth
2 cups water
salt and pepper
grated parmesan cheese
4 chicken sausage (I used Trader Joes Andouille), chopped (any sausage is good)
Gently mash 1 can of beans and set aside.
Heat 1 tablespoon of olive oil over medium heat in a dutch oven or soup pot.
Add onion and garlic and sauté for about 5 minutes.
Season with salt & pepper.
Add can of mashed beans along with broth and water and bring to a boil.
Add kale and second can of beans.
Cover loosely and simmer for 20 minutes.
If you are adding sausage, cut each sausage length wise in quarters and chop into small pieces. You can also remove the sausage from casing so that when it cooks it becomes crumbled.The sausage I used was fully cooked so really only needed to be heated through.
Add sausage to non stick pan and cook for about 5 minutes.
Add sausage to soup and simmer for an additional 5 minutes.
Portion into individual bowls and sprinkle with cheese and if you so dare serve with a nice pice of crusty bread (good dippy!)
