• 15 Minute Turkey Salsa Chili

    I am thinking I should have called this Trader Joe’s Chili because I think most of the ingredients are from there. But don’t fret as you can find all these ingredients in any supermarket. You can substitute any of the salsas for your favorites too! This one has a smokey taste from the tomatillo salsa so if that is not your fancy just swap it out for a different variety. If there was such a thing as Chili for dummies this would be the one! Literally took 15 minutes!! I wasn’t even sure if I should post the recipe but it was so good that why not share! I figured who doesn’t like easy quick and tasty and healthy! Serve over rice, cauliflower rice or just as is and top it off with some cubed avocado along with crunchy tortilla chips! Yum!img_6626

    15 Minute Smokey Chili

    Ingredients:

    • 1 lb ground turkey (chicken or beef work too)
    • 1-2 tablespoons olive oil
    • 1 jar salsa verde ( I use Trader Joe’s)
    • 1 jar hatch valley salsa (Trader Joe’s-it has a kick so if that’s not your thing just use 2 jars of one of the other salsas)
    • 1 jar tomatillo roasted yellow chili salsa (Trader Joe’s)
    • 1 bag frozen corn (I used Trader Joe’s roasted corn)
    • 1 can black beans, rinsed & drained
    • 1 can kidney beans, rinsed & drained
    • Toppings: avocado, cheese, cilantro, tortilla chips, squeeze of lime

    Directions:

    Heat the olive oil in a large pot or Dutch oven. Brown the meat, stirring often.
    Add the salsas, corn and beans.
    Stir and summer for 5 to 10 minutes (you can for longer but it’s ready to eat once heated through!)
    Top with avocado, cheese and/or tortilla chips and a squeeze of lime & enJOY!
