Ok guys, you must make this asap! I recently got the recipe from one of my all time favorite websites Smitten Kitchen. Deb Perelman’s recipes are beyond amazing and it is one I refer to quite often! You really should check it out! I saw this dish she posted on Instagram and it is my new fave! Literally takes less than 10 minutes to prepare and is great as a meal or a side dish. Add don’t leave off the cheese….its the bomb! I am going to make it for dinner next time and will add shrimp or chicken for sure! The nuttiness and crunch from the almonds is delish. Be sure not to overcook the zucchini…you want it to maintain its crunchiness! Try it soon, I promise you’ll love it!
Simple Zucchini & Almond Saute
1 large or 2 small zucchini cut into 1/8″ match sticks
1 1/2 tablespoons olive oil
2-3 tablespoons slivered almonds (I used 3)
Optional-Shaved Parmesan or Pecorino Romano cheese
Salt & pepper to taste
To cut the zuchinni into matchsticks, slice into 1/8″ rounds and then cut into 1/8″ matchsticks.
Heat a large skillet over medium-high and add enough oil to coat the pan well. Heat the oil until hot but not smoking, then add the almonds to the pan. Cook them, stirring, until the almonds are golden-brown, approximately a minute or two. Don’t skimp on this step; they provide a depth of flavor that carries the whole dish. Add the zucchini to the pan, tossing it with the oil and almonds until it just begins to glisten, about one minute. The idea is not to cook the zucchini so much as warm it so it begins to soften. Season well with salt and pepper, slide onto a plate, top with cheese (if using) and immediately dig in.
*I used 1 really large zucchini and ate the entire dish for lunch. I will definitely be making this often! If doing so I will double or triple the recipe depending on how many I am serving.
