• Quick Healthy Frittata For 2 (or 3)


    Make this if you want something quick, healthy and yummy!  Great for a brunch for a bunch! (didn’t mean to rhyme!) You can make it ahead, slice reheat.  Even better, serve at room temperature! This would also be a great make ahead for the week breakfast or lunch.  Just cool and wrap individual pieces and place in the fridge! What I’m trying to say is, it’s one of those breakfast, lunch, dinner kinda recipes. Ready in 15 minutes…what’s better than that! Serve with some mixed greens and or avocado to make it a complete meal!img_6144



    Quick Healthy Frittata For 2 (or 3)


    • 3 eggs
    • 1 cup egg whites
    • 1/4 cup freshly grated Parmesan cheese (you can certainly use more and can substitute your favorite hard cheese too)
    • 1 teaspoon herbs de Provence (Italian Seasoning is good as well)
    • Avocado oil (olive or coconut work too)
    • Salt & pepper to taste
    • 1 1/2 cups mushrooms, chopped
    • 1 handful fresh spinach
    • 9 grape tomatoes, halved


    Preheat oven to broil. Spray non stick pan with oil and heat over medium heat.
    Add mushrooms and sauté until golden brown. Combine eggs and egg whites and beat well
    Add cheese, Herbs de Provence, salt and pepper to egg mixture.
    Add spinach and immediately add egg mixture.
    Allow eggs to set and check bottom so that it does not burn (you
    may have to lower heat)
    Once the bottom is golden brown, scatter tomatoes on top and place on middle shelf of oven under broiler. Add more cheese if you like.
    Once completely set and golden brown, remove and slice into 4 triangles
    Serve and enJOY!
