A friend of mine brought me 2 beautiful tomatoes and a huge cucumber from the garden and I had some peppers in my fridge so I decided what’s not better than a delicious crisp salad of bright beautiful fresh cucumber, tomato and peppers….aka Israeli Salad! Super simple and easy to prepare, it took all of 10 minutes! Just chop of the veggies, feel free to add onion if you like, season with a little salt and pepper and drizzle with olive oil, lemon and a splash of red wine vinegar! Done!
1 large cucumber or 2 small to medium, seeded and cut up in 1/2 ” pieces
2 tomatoes, cut into 1/2 ” pieces
1 pepper (I used 1/2 orange, 1/2 red), sliced and cut into 1/2 ” pieces
1 lemon, juiced
2 tablespoons olive oil (I used lemon flavored)
2 tablespoons fresh dill, chopped
1/4 teaspoon fresh cracked pepper
1/8 teaspoon sea salt
a splash of red wine vinegar, about a tablespoon
Place chopped cucumber, tomato and peppers in a large bowl.
Add the fresh dill.
Season with salt and pepper.
Drizzle with olive oil, lemon juice and vinegar.
Toss well, cover and refrigerate for a half hour (this helps the flavors meld)-you can serve immediately as well but letting it sit for a bit helps bring out the flavors.
Serve alone, as a side or on top of grilled chicken! I had leftovers so the following day I added this to some chopped greens and topped with shrimp and avocado….yum!! (see last pics!)
