This is Larry’s new favorite breakfast and even though the recipe is sooooo easy I wanted to share it with you! It’s loaded with protein and healthy fats and it’s really really delicious! It actually makes a great lunch or dinner!
Black Bean Spinach Avocado Bowl
2-3 handfuls of fresh baby spinach
3 tablespoons black beans, rinsed and drained
2-3 eggs (depends how hungry you are)
1/2- whole avocado cubed (1/2 large or whole small)
1 tablespoon olive or coconut oil
olive oil or coconut oil cooking spray (any kind you like is good)
salt and pepper to taste
hot sauce (optional)
Heat oil in a large non stick pan over medium heat.
Add spinach (it may look like a lot but when wilted it shrinks!)
Cook the spinach for a few minutes until slightly wilted. Be sure not to overcook or it will become watery.
Place cooked spinach in bowl.
Add beans to spinach.
Spray the pan with cooking spray, add the eggs and if you like them over easy give them a quick flip once the edges begin to crisp. Immediately transfer eggs to the bowl with the spinach and bean.
