• Grain Free Fruit & Nut Granola


    If you know me, then you know how much I love nuts and granola so when I saw this recipe on Instagram I thought wow, this is just perfect!  I found the recipe on this amazing website called Gimme Some Oven. Ali has awesome recipes and you should definitely check out her blog! She recently posted this delicious grain free granola recipe that she got from an incredible new cookbook called Eating Clean by Amie Valpone. She too has a website called The Healthy Apple and she’s extremely talented and highly regarded in the world of clean eating.  Both are fabulous for anyone who eats clean or would like to. I have many granola recipes of my own, some with oats, some without and I can assure you that this one will be part of my granola rotation! IMG_2894
















    Grain Free Granola


    • 1 1/2 cups raw almonds, chopped or raw slivered almonds (I used slivered this time)
    • 1 1/2 cups unsweetened shredded coconut
    • 1 cup raw pecans, chopped
    • 1 cup raw Brazil nuts, chopped (Trader Joes sells them, but if you can’t find them, sub more pecans or walnuts)
    • 1 cup shelled raw sunflower seeds
    • 1 teaspoon ground cinnamon
    • pinch sea salt
    • 1/4 cup melted coconut oil (I used liquid)
    • 1/4 cup raw honey or pure maple syrup (I used raw honey)
    • 3 Tablespoons water
    • 1 1/2 teaspoons pure almond extract
    • 1 cup chopped dried apricots
    • 1/2 cup chopped dried cherries


    Preheat the oven to 325°F.

    Chop the apricots and cherries and set aside.

    Line a rimmed baking sheet with parchment paper.

    In a large bowl, combine the almonds, coconut, pecans, Brazil nuts, sunflower seeds, cinnamon, and salt.

    In a small bowl, whisk together the oil, honey, water, and almond extract.

    Add the wet ingredients to the nut mixture and toss to coat.

    Spread the granola on the  baking sheet in a single layer and bake for 25-30 minutes, or until golden brown, stirring halfway through.

    Remove the granola from the oven and stir in the dried apricots and cherries.

    Cool for before serving.

    Store in an air tight container in the freezer for longer shelf life.

    Enjoy sprinkled on greek yogurt, smoothie bowls, ice cream or just by itself for a healthy snack!
