As far as I am concerned, you can never have enough chicken recipes….and when it comes to summer and grilling this one is a definite keeper! So easy to make, healthy and really really delicious! If you like this one, try my Barbecued Curry Shrimp! Both are great for quick, no fuss summer grilling!
Barbecued Cumin Curry Chicken
10 thin chicken breasts, skinless and boneless
1/4 cup olive oil
1 tablespoon curry powder
1 tablespoon cumin powder
2 garlic cloves, minced or I used 2 teaspoons garlic paste (short cut)
1 teaspoon cracked pepper
1 teaspoon dijon mustard
Combine all ingredients except chicken and whisk well.
Pour over chicken, cover and marinate for at least 1 hour. (I marinated over night)
Place on grill for 8 minutes per side for thin cutlets and 10 minutes per side for thicker cutlets.
