• Sautéed Veggie Bowl with Fried Eggs

    People, this is seriously the bomb, especially if you like a little kick and smokiness! I made this on a whim for lunch and I am telling you it is so yummy! Don’t worry about measuring the veggies so much, just use what you have in your fridge! A small handful (1/4-1/2 cup) of each of the veggies and you’re good to go! Of course you can leave out the cayenne if you don’t enjoy the heat! You can poach or fry the eggs, the creaminess from the yoke really adds to the deliciousness!     Sautéed Veggie Bowl with Fried Egg

    Ingredients:

    • 1-2 tablespoons coconut oil
    • broccoli, chopped
    • zucchini, chopped (I had spiralized so I chopped that)
    • carrots, shredded
    • red bell pepper, chopped
    • mushrooms, chopped
    • cauliflower rice
    • 2 eggs, fried over easy or poached
    • a sprinkle of smoked paprika
    • a sprinkle of onion powder
    • a few grinds of black pepper
    • a sprinkle of cumin
    • a pinch of cayenne pepper (optional)
    • a pinch of chili flakes (optional) for on top of eggs

    Directions:

    Heat the oil in a pan over medium heat.

    Add vegetables to pan, sprinkle with seasoning and sauté for about 4 minutes, until veggies are softened but not soggy.

    Remove to a bowl and using the same pan (you may want to add a drop more oil or spray), cook the eggs.

    Add eggs to top of vegetables, sprinkle with chili flakes if you are using and poke the yoke so that it runs into the veggies.
