This might be my new fave grain free granola!! It’s crazy good, hence the name! Just nuts and chia seeds gently sweetened with cinnamon and agave. Once cooled you can break it into huge chunks of yumminess. The only problem is its hard to stop at just one serving!!! Top your yogurt, ice cream, smoothie or enjoy with some milk and you’ll be in granola heaven! As I have said before there is no reason to buy store bought when you can make your own and know exactly what’s in it! Forgive me for the lack of photos but I honestly did not think it would turn out as delicious as it did…literally made this so quickly when I realized I was out of granola in my freezer!
Crazy Chunky Granola
2 cups chopped walnut pieces
2 cups slivered raw almonds
1 1/2 cups chopped pecans
1/4 cup chia seeds
1 cup unsweetened coconut flakes
2 tablespoons cinnamon
1 teaspoon vanilla
1/3 cup agave or raw honey
1 cup dried cranberries (or raisins)
Preheat oven to 350 degrees.
Place nuts, chia seeds, coconut, cranberries and cinnamon in a large bowl. Mix well.
Add vanilla to honey and drizzle over nut mixture.
Mix very well until everything is coated.
Place in a single layer on a parchment lined baking sheet.
