• Veggie Skillet Parmesan Melt

    I made this for lunch and a highly recommend trying! So yummy, like a veggie parm! This dish is not only a great vegetarian main course but equally perfect side dish! Feel free to add as much or as little cheese as desired. Also a nice dish that can easily be prepared ahead. If doing so just add cheese and broil when you are ready to serve!!

    Veggie Skillet Parmesan Melt

    Ingredients:

    • 1 tablespoon coconut oil (olive oil
      is good too)
    • Coconut or olive oil spray
    • 1 cup mushrooms, sliced
    • 1 cup chopped broccoli
    • 1 zucchini, chopped
    • 1/2 cup red pepper, chopped
    • 1 packed cup baby kale
    • 1 cup marinara sauce ( use your fave~I used Victorialow sodium)
    • 1 teaspoon dried oregano
    • 1 teaspoon dried or fresh basil
    • 3 tablespoons shaved Parmesan cheese ( I used a blend of Parm, Romano & Asiago~you can also add low fat mozzarella now if you want it really cheesy)
    • Pepper to taste
    • Chili flakes (optional)

    Directions:

    Prepare vegetables and preheat oven broiler.
    Heat oil,  add mushrooms and cook until lightly browned.
    Add the rest of the veggies and sauté for 3 minutes making sure they are al dente.
    Season with oregano, basil and pepper and chili flakes if you are using.
    Add marinara sauce, stir, reduce heat and sprinkle with cheese.
    Place pan under broiler for a minute or two, until golden and bubbly.
    Transfer to dish and serve immediately.
