Since my oaties are a fan favorite, I thought why not try making them using matzah farfel and guess what…happy I did! We all know Passover desserts can be kinda yuck, well these are yum! Made with no added sugar and just 5 ingredients! Super easy and healthy, making them a great snack for all those observing! They will definitely be on our Passover table for dessert this year. 4 medium or 5 small bananas, mashed
3 1/2 cups Matzo Farfel (I used whole wheat)
1 tablespoon cinnamon
1/3 cup dried cranberries (I used low sugar)
1/3 cup dark chocolate chips (I used Enjoy Lifes)
optional mix-ins-walnuts or raisins
Preheat oven to 350 degrees
Add fearful and cinnamon and mix well.
Add cranberries and chips and stir until well combined.
Using a small cookie scoop, spoon cookies onto cookie sheet lined with parchment paper or silpat.
Bake for 30-40 ,minutes (30 if you like soft cookies, 40 if you like crispy edges and soft center.
