• Grain Free Antioxident Granola

    This granola is filled with healthy goodness and is grain free, absolutely delicious, but a little addicting I must add! It’s hard to stop at a few spoonfuls when topping my yogurt or smoothie bowl. It’s packed with tons of nutrition and great for an on the go or post workout snack! I like to add dried fruit and store it in the freezer for long lasting freshness!

    Grain Free Antioxident Granola

    Ingredients:

    • 2 cups walnut pieces
    • 2 cups slivered almonds
    • 1 cup sunflower seed
    • 1 cup pumpkin seeds
    • 1/4 cup chia seeds
    • 1 cup unsweetened coconut flakes
    • 1 1/2 tablespoons cinnamon
    • 1/4 cup coconut oil melted
    • 1/4 cup agave or honey
    • 1 teaspoon pure vanilla extract
    • Optional:1 cup dried cranberries, cherries or raisins (I add when I am eating)

    Directions:

    Preheat oven to 350 degrees.
    Place nuts, seeds, coconut flakes and cinnamon in a bowl, mix.
    In a small bowl combine oil, agave and vanilla and whisk until combined.
    Pour over nut mixture and mix well until everything is coated.
    Place on a parchment t lined baking sheet in a single layer.
    Place in he oven for 25 minutes.
    Cool and store in an airtight container. I store mine in the freezer for longer lasting freshness.
    Enjoy alone or sprinkled on yogurt, smoothie bowl, fro-yo or icecream!
