This is a wonderful healthy salad to enjoy alone, on some greens or on delicious crusty bread as a sandwich. I put mine on a salad of pea shoot greens and arugula and it was lovely. Its also great for serving a crowd, for lunch or brunch! So light, crunchy and delicious and a great alternative to your typical tuna salad that’s not
laden with mayo!
Crunchy Veggie Tuna Hummus Salad
2 cans white tuna (I use Trader Joes no salt added)
3 small carrots, chopped
3 small celery hearts, chopped
1/2 medium zucchini. chopped
1/2 red pepper, chopped
1 cup broccoli, chopped
salt & pepper to taste
1 lemon, juiced
1 cup of hummus (your favorite store bought or homemade is best!)
Chop all veggies and place in a bowl.
Add tuna and mix well.
Squeeze with lemon juice and season with salt and pepper.
Add hummus and mix until everything is coated.
Serve alone, with some healthy crackers (I love Mary’s), in a sandwich or on top of arugula or your favorite greens.
