• Chicken Cauli Cheesy Melt


    This was one of those recipes that I winged, being that I took out ground chicken from the freezer in the morning in hopes of making chicken lettuce cups but guess what…I forgot to buy the lettuce! Oopsie,  there went that idea! I decided to use what I had in the fridge  and this little improvised dinner was a sure winner and let me add beyond easy! Almost embarrassing how easy! I love one pan dishes especially when it comes to clean up!!! I don’t have many pics because honestly didn’t think it was going to turn out so yummy!Enjoy!





    Chicken Cauli Cheesy Melt


    • 1 lb. ground chicken breast
    • 1 tablespoon olive oil
    • 10 oz. cauliflower crumbles (cauliflower rice)-Green Giant sells the crumbles in a bag!
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon poultry seasoning
    • 1 teaspoon italian seasoning
    • 24 oz. marinara or tomato sauce (I used Raos)
    • salt and pepper to taste
    • 8 -10 oz. shredded mozzarella


    Preheat oven broiler.

    Heat olive oil over medium heat in a large cast iron or oven proof pan.

    Add chicken to pan and brown using the back of the wooden spoon to break up the meat.

    Season the chicken with the garlic powder, onion powder, salt and pepper, and italian herb and poultry seasonings.

    Once the chicken is no longer pink add the cauliflower to the pan and mix until combined and continue to cook for a minute or two.

    Add the sauce and reduce heat to a simmer and continue cooking for about 15 minutes.

    Sprinkle with the cheese and place pan under broiler until golden brown and bubbly.

    Spoon into bowls and enJOY!
