• Walnut Hempseed Edamame Salad with Lemony Vinaigrette


    OMG this salad is sooooo good…You have to try it! So easy, fresh,  delish and healthy you will love! Loaded with healthy vegetarian protein, healthy fats and vitamins and antioxidants, it’s just heaven! A real feel good salad! It’s lightly dressed with lemony goodness and I just love the nutty flavor of the toasted walnuts mixed with the edamame. The hemp seeds add a nice little bit of protein and texture along with the crunch of the raw zucchini noodles and arugula! This bowl of yum is so clean and fresh and I really hope you try it and like it as much as I did! Let me know!


    Walnut Hemp Seed Edamame Salad with Lemony Vinaigrette


    • 1 cup chopped romaine
    • 1/2 cup watercress
    • 1 cup arugula
    • 1 cup raw spiraled zucchini
    • 1/2 cup raw edamame
    • 1 tablespoon hemp seed hearts
    • 1/4 cup chopped walnut pieces
    • 1/2 lemon
    • 1 tablespoon olive oil
    • 1 tablespoon red wine vinegar
    • salt & pepper to taste


    Place walnuts in a small non stick pan and toast over low heat for 3-5 minutes, shaking the pan often (watch them as you don’t want them to burn)

    Place lettuces and zucchini in bowl.

    Drizzle with lemon juice, olive oil and vinegar.

    Add edamame, sprinkle with hemp seeds and walnuts.

    Season with salt & pepper to taste.

    Toss and enJOY!
