Another super clean, fresh, healthy, crunchy, delicious, filling, satisfying salad was born today! Now I hope that is descriptive enough! LOL! Made this on a whim and am in love with how yummy it is! I love raw zucchini noodles, there’s just something so good about the healthified crunch they exude. If you prefer them cooked a tad, then go ahead and throw them in a pan with a bit of olive oil for a minute and then follow recipe! enJOY!
Raw Zucchini Noodle Rainbow Veggie Salad
Ingredients:
2 cups raw zucchini noodles
1 1/2 cup packed arugula
3 artichoke hearts, chopped (I used canned)
4 grape tomatoes, halved
1/4 cup shredded red cabbage
1/4 cup shredded carrots
1/4 cup baby bella mushrooms
1/2 avocado, cubed
1 tablespoon hemp heart seeds (optional)
parmesan (optional)
salt and pepper
Dressing:
1 tablespoon olive oil
1 tablespoon red wine vinegar
juice from 1/2 lemon
1 teaspoon dijon mustard
Directions:
Place zucchini, arugula, cabbage, carrots, tomatoes, artichokes and mushrooms in bowl.
Combine dressing ingredients, whisk and pour on veggies.
Add avocado and sprinkle with hemp seeds.
Season with salt and pepper to taste. Sprinkle with cheese if desired.
