• Healthy Oatmeal Raisin/Chocolate Chip Cookies

    A fellow food loving friend of mine shared this recipe with me and I am telling you, these are a must try in the cookie department. I can assure you they will be part of my favorite cookie repertoire. You can make with or without nuts and chocolate chips. I made with raisins and chips this time…will add nuts next time. They’re really delicious and seriously addicting!

    Healthy Oatmeal Raisin/Chocolate Chip Cookies

    Ingredients:

    • 3 eggs, well beaten
    • 1 teaspoon vanilla
    • 1 cup coconut oil
    • 1/2 cup coconut sugar
    • 2 1/2 cups whole wheat pastry flour
    • pinch of salt
    • 1 teaspoon cinnamon
    • 2 teaspoons baking soda
    • 2 cups oats
    • optional mix-ins~3/4 cups raisins, chocolate chips, walnuts (or all)

    Directions:

    Preheat oven to 350 degrees.

    Line baking sheet with parchment paper.

    Beat eggs and add vanilla and raisins (so that raisins soften) and let sit while you prepare the rest of the recipe.

    Cream coconut oil and sugar.

    Add flour, salt, cinnamon and baking soda and mix until well combined.

    Blend in egg-raisin mixture, oats and nuts and or chips (if you are using).

    Dough will be somewhat stiff.

    Using a small cookie scoop, spoon dough balls onto baking sheet.

    Flatten slightly.

    Bake for 15 minutes.

    Remove from oven, cool and enJOY!

    Freeze leftovers, thaw or reheat in the microwave.

    Yielded 27 cookies
