I L-O-V-E lemon and this lemon crock pot chicken is so yummy! I am truly falling back in love with my crock pot! It’s like riding a bike with no hands lol! A little prep work to sear the chicken and thats it! No, but really…this chicken is super juicy and filled with lemony deliciousness! The hint of oregano, rosemary and thyme really works perfectly with the lemon. The chicken falls apart a bit, but served over rice, quinoa or roasted potatoes, drizzled with the sauce, it is scrumptious!
Crock Pot Lemon Chicken
6 large boneless and skinless chicken breasts
1-2 teaspoons dried oregano
2 cloves minced garlic
1/2 cup chicken broth
1/2 cup (about 3 lemons)lemon juice
2 tablespoons butter
salt and pepper to taste
small package of fresh poultry blend herbs (optional) or a few sprigs of rosemary and thyme.
1 lemon sliced, for garnish
Pat chicken dry and season with salt, pepper and oregano.
Heat a large saucepan or cast iron pan over medium heat.
Add 1 tablespoon of butter to pan and cook chicken about 2-3 minutes per side. You will need to do this in batches. Add the second tablespoon of butter as needed.
Remove chicken and place it in the crock pot.
Pour a little chicken broth into the pan to deglaze it and scrape up any little bits. Pour this into the crockpot.
Add garlic, lemon juice, broth and fresh herbs to the crock pot.
Cook on low for 4 hours and then keep on warm until ready to serve.
Place chicken on platter, pour sauce over it, garnish with lemon slices and enJOY!
