• Superfood Granola

    If you have been following my recipes on my blog and Instagram you already know I am obsessed with granola or shall I clarify that by saying I love anything crunchy! Granola is such a great healthy food that’s so easy to make at home and I would strongly suggest you make your own as it’s way healthier than store bought. You know exactly what you’re eating and there’s no guessing as to preservatives and added sugars! This recipe contains lots of superfoods in addition to some nuts, seeds and organic rolled oats. Clean ingredients and gently sweetened with honey and agave… really delish!  Another reason I am so fond of granola is that its so diverse, enjoy it dry as a snack, with milk for breakfast or as a deliciously crunchy topping for yogurt, smoothie bowls, fro-yo and ice cream. I store mine in an airtight container in the freezer so it stays fresh longer.IMG_2060

    Superfood Granola

    Ingredients:

    • 4 cups organic rolled oats
    • 2 cups of nuts/seeds ~ I use 1/2 cup of each of whole almonds, walnut pieces, slivered almonds and sunflower seeds.
    • 2 tablespoons hemp hearts (hulled hemp seeds)
    • 2 tablespoons flaxseed meal
    • 1 tablespoon chia seeds
    • 2 tablespoons cinnamon
    • 1 teaspoon pumpkin pie spice
    • dash of salt (optional)
    • 1/4 cup liquid coconut oil
    • 1/4 cup honey (I used raw honey)
    • 3 tablespoons agave
    • 1 teaspoon vanilla extract
    • 3 tablespoons liquid egg whites
    • 1/2 cup dried fruit~cranberries, raisins, apricots etc.

    Directions:

    Preheat oven to 350 degrees and line a large baking sheet with parchment paper (easy clean up)

    In a large bowl combine oats, nuts, seeds flaxseed meal, hemp hearts, chia seeds, cinnamon, pumpkin pie spice and salt.

    In a small glass bowl add oil, honey, agave and vanilla and heat in the microwave for 25 seconds, stir. If you only have solid coconut oil you will need to heat for longer until mixture is smooth.

    Pour over oat mixture and mix well until everything is well coated.

    Add egg whites and continue stirring until well combined.

    Pour mixture onto baking sheet and bake for 25 minutes.

    Remove from oven, add dried fruit and cool.

    Store in an airtight container once cooled and store in freezer for long lasting freshness.
