    I feel like a kid who just received a new toy!!! I have always wanted a stand mixer, just didn’t want to spend the money so when I saw an email from Bed Bath Beyond advertising the Kitchen Aid Stand Mixer was on sale I bit the bullet and ordered it! Yes I also got the 20% discount! Boy am I glad I did. Why did I wait so long! The best is that it arrived the next day. I had a bunch of ripe bananas and instead of freezing them I decided to make Banana Bread. I used my new mixer and oh what a breeze! I have been making the same recipe for years and decided to make it a bit healthier by using Spelt Flour, which is an ancient grain cereal and has a slight nutty flavor with a hint of sweetness. It’s also richer in nutrients, such as protein and minerals. Guaranteed deliciousness and will be gone in a flash!IMG_2208

    Healthy Banana Bread

    Ingredients:

    • 1 3/4 cups spelt flour
    • 2 3/4 teaspoons baking powder
    • 1/3 cup coconut oil
    • 2/3 cup sugar (or coconut sugar)
    • 2 large eggs
    • 3 small or 2 large bananas mashed
    • pinch of salt
    • optional mix-ins~chocolate chips, walnuts, blueberries, raisins or cranberries.

    Directions:

    Preheat oven to 350 degrees.

    Spray a loaf pan with cooking spray.

    Cream oil and sugar.

    Add eggs and bananas (if using stand mixer you can use whole bananas).

    In a separate bowl combine dry ingredients and add to wet ingredients or if using stand mixer add directly to wet ingredients.

    Mix until combined.

    Add mix-ins now and fold in with a spatula.

    Pour batter into loaf pan and bake for 55-60 minutes, test with a toothpick.

    Slice and enJOY!
