• Low Fat Chocolate Chip Cookie Stix

    Always searching for “healthier” chocolate chip cookie recipes, and when I came across this recipe, I adapted it to make it a bit “healthier”.  Don”t get me wrong, I wouldn’t categorize them as a health food, but a better alternative to the typical butter, sugar, white flour laden cookies we all enjoy! I liked the idea of slicing them into small sticks, almost like biscotti! They came out way better than expected and are certainly most satisfying! Chewy and soft on the inside with nice crispy edges.IMG_0892

    Low Fat Chocolate Chip Cookie Stix

    Ingredients:

    • 1/4 cup light butter, softened (I used Land O Lakes Light Butter)
    • 2 tablespoons unsweetened applesauce
    • 1 cup coconut sugar
    • 1 tablespoon vanilla extract
    • 1 egg
    • 1 1/2 cups Spelt Flour (all purpose is ok too, just not as healthy)
    • 1/2 teaspoon baking soda
    • dash of salt
    • 1/3 cup dark chocolate chips (I use Enjoy Life’s)

    Directions:

    Preheat oven to 375 degrees.

    Line a baking sheet with parchment paper.

    Combine butter, applesauce, sugar and vanilla in a bowl and whisk well until creamy.

    Add the eggs and whisk some more until combined.

    In a separate bowl combine the flour, baking soda and salt, mix.

    Add dry ingredients to wet ingredients, stirring until combined well.

    Pour the batter onto the baking sheet and using a rubber spatula, spread into a square, approximately 10-12″ x 10-12″.

    Sprinkle with chocolate chips. Using the tips of your fingers, gently press the chips into the batter.

    Bake for 20-25 minutes or until golden brown. They will be soft, but will firm up as they cool.

    Cool for 15-20 minutes.

    Once cooled, cut them into 1/2″ sticks and then into thirds. (I ended up with 45 sticks). If you want them crispier (like biscotti), once sliced return to baking sheet and oven for an additional 10 minutes. If you like them chewy as is, gently remove them using a spatula and continue to cool on a wire rack (if you can wait!)
