• Frittata with Shrimp and Power Greens


    I had some uncooked shrimp in the fridge they I wanted to use and was craving eggs and this is how it went…

    I sautéed some red onion, mushrooms and added some power green mix (spinach, kale & chard) that I had in the fridge. I cut up the shrimp and gave them a squirt of sriracha, threw them in the pan for a few minutes, scrambled eggs and egg whites, put everything in the pan with a little fresh dill (love dill with eggs) and that is it! Cooked on the stove for 2 minutes, put it under the broiler for another 2 minutes and DONE! So if you’re looking for super easy, nutritious and delicious you should try this. Feel free to omit whatever you don’t like but I am telling you it was so so tasty!IMG_1470




    Frittata with Shrimp and Power Greens


    • 2 large eggs
    • 2 egg whites or 1/4 cup liquid egg whites
    • 2 tablespoons, red onion, chopped
    • 1/2 cup mushrooms, chopped
    • handful (about 1/2 cup) any power greens (I used mixture of spinach, kale & chard)
    • 1 -2 teaspoons grapeseed oil
    • 2 tablespoons fresh dill, chopped
    • 4 large shrimp, cut into chunks
    • squeeze of Sriracha Sauce (omit if you don’t have)
    • pepper to taste
    • chili flakes (optional)


    Preheat oven broiler.

    Heat non stick pan over medium low heat and add 1 teaspoon of grapeseed oil (any oil is good, or non stick spray is fine)

    Place shrimp in pan and mix them for about a minute, remove from pan and set aside.

    Add onions to pan and sauté for a few minutes, until softened, then add mushrooms. Continue mixing until mushrooms are browned. Add power greens and stir for another minute. Add more oil to pan as well as the shrimp.

    Add dill to egg mixture and beat well.

    Pour egg mixture into pan and season with pepper and chili flakes if you are using.

    Cook on medium heat for about 2 minutes.

    Place pan under oven broiler for 2 minutes, until top is golden brown.

    Remove to plate and enJOY!
