This soup is a classic result of “use what you have” in your fridge! It bothers me tremendously to waste food and since I had a bunch of carrots, celery and grilled chicken in the fridge I decided to throw it all in a pot with chicken broth, add some lemon and dill and it was beyond yum! I placed a small julienned zucchini and a handful of power greens (baby kale, chard, spinach~sold in a bag or box) in a bowl and ladled the soup over it. It might be my new fave! There is no oil or sautéing here..super easy and ready in less than a half hour!
Chunky Grilled Chicken Soup with Power Greens
8 cups chicken broth (I used Progresso sodium free)
1 cup water
3-4 grilled chicken breasts, cut in chunks (I used Trader Joes Grilled Lemon Chicken~used 2 packages)
4-5 carrots, peeled and cut in chunks
4-5 celery stalks, cut in chunks
1 medium onion, cut up in chunks
1 bay leaf
1 1/2 large lemons, juiced
1/4 cup fresh dill, chopped
black pepper, to taste
optional but suggested~1 small julienned zucchini (per bowl)
optional but suggested~1 small handful power greens (per bowl)
Place carrots, celery, onion, bay leaf, water and broth in a dutch oven or large soup pot and heat over medium heat. Season with black pepper. Bring to a boil, reduce heat and simmer for 20 minutes.
Add lemon juice, chicken and dill and heat until warmed through, about 5-10 minutes.
If you are using the zucchini and power greens, place them in a bowl now. Ladle soup over the vegetables. Season with more pepper to taste and enJOY!
