I don’t think there is anyone in the world who does not like granola! Yes I am sure there are many who don’t eat it because they are afraid of the carbs in the oats but the truth is, lets be real…YOLO!!! A little carb here and there won’t hurt anyone. I am a firm believer that we need to enjoy everything in moderation …HEALTHY is much more important than calorie, carb and fat counting! Eat for life long wellness, not for a quick fix or loss of weight because we all know this doesn’t work! I make lots of granolas, some with nuts and oats, some just with nuts so being that I am home today with my youngest son who has a sniffle I decided to try a new twist using Muesli since my Muesli Oaties were such a hit! Muesli Granola! Yummy and healthy! Enjoy it alone, with milk, or on top of yogurt or ice cream! It’s really really delish!
2 cups Muesli
3/4 cup walnuts, chopped
3/4 cup pecans, chopped
3/4 cup almonds, chopped
1/2 cup honey, agave or maple syrup
pinch of salt
1-2 teaspoons cinnamon ( I love cinnamon so obviously I used 2)
1/2 dried cranberries or raisins
Preheat oven to 325 degrees. Either spray a baking sheet with cooking spray or line with parchment paper.
In a medium bowl, combine muesli, nuts, salt, cinnamon and cranberries. Mix well.
Add honey and stir very well until everything is coated.
Place mixture in a single layer on baking sheet.
Bake for 30 minutes, stirring once after 15 minutes.
Remove and cool.
Store in airtight container. I keep mine in freezer.
EnJOY alone, with some milk or as a topper for yogurt or ice cream!
