• Grilled Salmon Zucchini Noodle Bowl

    This was just a quick lunch I made, kind of winged it and decided to share it because it tasted delicious and thought it was a great idea for lunch or dinner. I had bought a piece of blackened salmon at the fish store, which made it even easier! A nice change from a salad and certainly can be made with any favorite protein…chicken would be just as yummy!IMG_1097

    Salmon Zuchinni Noodle Bowl

    Ingredients:

    • 1 piece of grilled or blackened salmon (I used store bought)
    • olive oil spray
    • 1/2 cup sliced mushrooms
    • 1 large zuchinni spiralized
    • 1 teaspoon Dijon mustard
    • dash of garlic powder
    • pepper to taste
    • dash of chili flakes (optional)
    • 1 handful wild arugula
    • 1 tablespoon shaved Parmesan (more or less to taste)

    Directions:

    Sauté mushrooms in olive oil spray until browned.
    Add zuchinni with a little more olive oil spray, sprinkle with a dash of garlic powder and chili flakes (optional and continue to cook for 1 1/2 minutes until heated through.
    Place cooked zuchinni and mushrooms in bowl with small handful of wild arugula.
    Place salmon on dish (I bought blackened salmon at the seafood store)
    Using a fork, mash the fish so it flakes and add 1 teaspoon of Dijon mustard onto salmon and mix well.
    Add fish to bowl with veggies and sprinkle w shaved parmesan cheese.
    Toss and enJOY!
