Sauté mushrooms in olive oil spray until browned.
Add zuchinni with a little more olive oil spray, sprinkle with a dash of garlic powder and chili flakes (optional and continue to cook for 1 1/2 minutes until heated through.
Place cooked zuchinni and mushrooms in bowl with small handful of wild arugula.
Place salmon on dish (I bought blackened salmon at the seafood store)
Using a fork, mash the fish so it flakes and add 1 teaspoon of Dijon mustard onto salmon and mix well.
Add fish to bowl with veggies and sprinkle w shaved parmesan cheese.
Toss and enJOY!
