Another rainy day recipe happened today! This one kind of occurred by chance as I was browsing through the many different accounts on Instagram that I follow… some healthy, some not so healthy, some vegan, some paleo, but nonetheless all incredible accounts…so many super talented people! I do not follow any strict diet when it comes to food, just try to keep it healthy….everything in moderation! For this recipe I took a little from here and a little from there and voila, these cute delicious flour free cookies were baked. I guess you can say they are Vegan for those who abide by this dietary way of eating, which means no consumption of animal products. Vegan or not, these are a great little healthy cookie that will cure any sweet tooth without the guilt. Oh and more thing…they are soft, pillowy and delicious and you would never ever know there was a bean anywhere near them! My son Sean who has never eaten a vegetable or bean in his life liked them…Shhh!
Flourless Chocolate Chip Cookies
1 can of chickpeas (garbanzo beans)
1/4 cup coconut sugar
1/2 cup almond butter
1 teaspoon baking powder
1/3 cup dark chocolate chips plus a few more to add on top (I use Enjoy Life)
Preheat oven to 350 degrees.
Rinse and drain chickpeas.
Place chickpeas, sugar, almond butter and baking powder to blender or food processor.
Pulse until combined and texture is smooth. You may need to scrape down the sides until mixture is fully mixed.
Add chips and fold into batter. It will be quite thick.
Roll 1 teaspoon sized portions of dough into balls and place on parchment lined cookie sheet.
Using your fingers, flatten balls. This makes 17 cookies.
Press a couple of chocolate chips on top of cookies and bake for 15 minutes.
Remove cookies and allow them to cool on wire rack.
