• Muesli Oaties (with & without Chocolate Chips)

    There’s a new cookie in the house! Muesli is a  delicious cereal made of whole grains, dried fruits, nuts and seeds and can be enjoyed hot or cold, with or without milk.  Since my “Oaties” are a fan favorite I decided to make a version using muesli and they turned out amazeballs! Not only are they super healthy, but yummy too!! Quite simply, these can be the easiest of easy cookie recipes! Only 3 ingredients…could have been just 2 ingredients, but of course I had to add cinnamon… had too, as I just  love cinnamon!  I made a second batch and added a handful of dark chocolate chips (at my hubbys request) as we all know that chocolate makes everything better.  Easy, healthy, tasty and satisfying all in one little “Oatie” cookie! Try them!

    Ingredients:

    • 3 cups muesli (I use Bobs Red Mill~click below to order)
    • 3 large ripe bananas mashed
    • 1 tablespoon cinnamon
    • 1/4-1/2 cup dark chocolate chips -optional (I use Enjoy Life’s)

    Directions:

    Preheat oven to 350 degrees

    Mash the bananas.

    Add muesli and cinnamon (and chips if you are using).

    Mix until well combined.

    Use an ice-cream scoop to spoon the mixture onto a parchment lined baking sheet.

    Flatten cookies with the back of fork.

    Bake for 30-40 minutes (30 if you like softer cookies)

    Cool on wire rack.

    This makes about 17 cookies (depending on size of scoop) and I always freeze all my Oaties in a freezer bag once fully cooled. (And eat them directly out of the freezer!)
