• Maple Soy Glazed Cod

    This recipe is super easy, and quite delish! It’s not an easy task to make fish look good, but I promise it tastes better than it looks! So simple a recipe as well as quite tasty. I was almost embarrassed to post it, and trust me I did think twice about it but decided what the hey…how could I not share something so flavorful! The glaze would work perfectly on salmon too. The combination of soy and maple syrup are a marriage made in heaven, a little salty bite from the soy with warm sweetness of the maple syrup. I served it with brown rice sprinkled with dill and Crispy Artichokes, and it was thoroughly enjoyed by all.

    Maple Soy Glazed Cod

    Ingredients:

    2-4 pieces of fresh cod

    1/4 cup soy sauce (I use low sodium)

    1/3 cup good maple syrup

    pinch of ginger

    olive oil for pan

     

    Directions:

    Preheat oven broiler.

    Place soy sauce , maple syrup and ginger in bowl and mix well.

    Add fish at least 30 minutes before you are ready to cook.

    Heat cast iron pan, add a swirl of olive oil.

    Place fish in pan and reserve liquid in small saucepan and heat on low heat until it begins to bubble.

    Cook fish for about 5 minutes.

    Remove and place under broiler for about 5 minutes.

    Transfer fish to plate and drizzle with reserved sauce.

    Serve and enJOY!
