• Crunchy Pumpkin Pie Nutty Granola


    It’s worth it to make this granola just so that your house can smell as good as mine! Warm, cinamonny, pumpkinny deliciousness!! (not sure if those are real words but who cares!) This crunchy nutty granola is YUM, made without oats, grain free. Sprinkle it on your favorite smoothie bowl, yogurt, nice cream, ice-cream or just enjoy it alone. Pure heaven!

    • 2 cups chopped walnuts
    • 2 cups slivered almonds
    • 1 cup pepitas (pumpkin seeds)
    • 1 cup chopped pecans
    • 1 cup pistachio nuts, chopped
    • 1 cup dried cranberries
    • 1/3 cup agave
    • 1/4 cup coconut oil
    • 1 tablespoon cinnamon
    • 1 tablespoon pumpkin pie spice


    Preheat oven to 350 degrees.

    Place all the nuts in a large bowl.

    In a small saucepan heat agave, oil, cinnamon and pumpkin pie spice over low heat until smooth, mixing often (takes just a few minutes).

    Pour mixture over nuts and mix well until everything is coated nicely.

    Transfer to parchment lined baking sheet, in a single layer.

    Bake for 25 minutes.

    While granola is cooling sprinkle with dried cranberries.

    Once fully cooled, transfer to large bowl or airtight container and store at room temperature or in the freezer for a longer shelf life (I store all my nuts and granola in the freezer).
