Just another spin on pesto….this time I used basil and hemp seed in place of nuts. For those of you who do not eat nuts, this is the perfect pesto! Hemp seeds have a tremendous amount of health benefits, a great source of vitamin A, C & E, rich in protein and fiber as well as omega 3 fatty oils. I made it with zucchini noodles to serve as a side. Enjoy it on any pasta, as a topping for your veggies or as an accompaniment to chicken or fish!
basil…hemp seeds…process…flash cook zucchini…add the pesto…toss…sprinkle with fresh basil and serve…
2 cups fresh basil
2 cloves minced garlic or 1 teaspoon garlic powder
1 tablespoon hemp seeds
1 tablespoon lemon juice
1/4 cup olive oil
pinch of salt
3 large zuchinni, spriralized
Place basil, garlic, hemp seeds, lemon juice and salt in blender or processor and and olive oil as you are blending. Blend until smooth and creamy.
Place zuchinni in a pan drizzled with a tablespoon of olive oil and cook for 1 minute, tossing continuously.
Remove zuchinni to bowl and coat with pesto, toss and serve warm or at room temperature. I prepared it earlier and removed from fridge 2 hours before serving.
