• Turkey Veggie Bolognese


    Can you say easy?? This recipe takes the cake in the easy and delicious department for sure! One pot, not a lot of ingredients, and ready in a flash! Even better…make it ahead! My kind of meal! Oh, and did I forget to say HEALTHY?! That too!!!

    • 1-10 oz. box of mushrooms, chopped
    • 2 zuchinni, chopped in small pieces
    • 1 package (1.3 lb.) ground turkey
    • 2 -3 tablespoons olive oil
    • 1 24 oz. jar of your favorite marinara sauce
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • salt & pepper to taste
    • chili flakes (optional)
    • parsley for garnish (optional)
    • fresh grated parmesan cheese (optional)
    • Pasta of choice…I used Gluten Free Black Bean Pasta…very high in protein and low in carbs! Click below for easy ordering!


    Heat 1 tablespoon olive oil in a large saucepan.

    Add mushrooms to pan and sauté for 8-10 minutes.

    Add zucchini, drizzle with a little more olive oil, salt and pepper, and sauté for 5 minutes.

    Remove vegetables to bowl.

    Using same pan, add 1 tablespoon olive oil and turkey. Sprinkle with garlic powder, onion powder, salt and pepper and using a wooden spoon break up the turkey as it cooks. Cook until meat is no longer pink.

    Add veggies back to pan, mix, add sauce, mix again. If using chili flakes, add a sprinkle or 2 now. Lower heat.

    Simmer for 10-15 minutes.

    Cook pasta of choice according to box instructions, al dente is best!

    Spoon bolognese over pasta.

    Sprinkle with grated cheese and parsley.
