• Thai Green Curry Shrimp with Black Bean Spaghetti


    If you are looking for the easiest, and I mean easiest shrimp dish then you must try this!!!! I almost feel like I cheated after making this because the sauce comes in a jar! Shhhh….no need to tell anyone! I served the shrimp over black bean spaghetti, (see below to order on Amazon-I ordered a case!) which is gluten free, super high in protein and low in carbs. In addition to being a terrific alternative to pasta it had a great taste. No, it does not taste like black beans, I promise!

    • 1 lb. jumbo shrimp, cleaned, tail off
    • 7.05 oz. bag of Explore Asian Organic Black Bean Spaghetti
    • 12 oz. jar Trader Joes Thai Green Curry Simmer Sauce
    • 2 tablespoons olive oil
    • black pepper to season shrimp


    Prepare pot with salted water and heat over high heat.

    In another saucepan, heat the olive oil over medium heat.

    Place shrimp in pan in a single layer and cook about 3 minutes per side until opaque.

    Pour Thai Curry sauce in pan with shrimp and reduce heat to a low simmer, stir occasionally while pasta cooks.

    Place pasta in water and cook for 6-7 minutes, al dente.

    Remove pasta to a colander and rinse with cold water.

    Immediately portion pasta into bowls (serves 4) and spoon shrimp and sauce on top.
