• Barbecued Curry Shrimp

    These were a true crowd pleaser! If you are looking for an easy, healthy and super tasty shrimp dish then you will be very happy with this recipe! The flavors are so delicious and I promise not overpowering at all and work perfect with shrimp…. not saying that this marinade wouldn’t be amazing on chicken, because it definitely would!!! And if you have leftovers (which I am sure you won’t), they make the perfect addition to any salad!

    Ingredients:

    • 2 lb jumbo shrimp
    • 1/3 cup olive oil
    • 2 cloves garlic, minced
    • 1 tablespoon Dijon mustard
    • 1 tablespoon cumin
    • 1 tablespoon curry powder
    • 1/2 teaspoon cracked pepper
    • 1/4 teaspoon salt

    Directions:

    Place shrimp in a bowl and put aside.
    Place the rest of the ingredients in a small bowl and whisk until combined.
    Pour dressing over shrimp, cover and refrigerate if you are not making immediately.
    Place shrimp either directly on grill, on skewers on grill or in a foil pan (covered)
    I put them in foil and covered with another piece of foil and placed packet carefully on grill.
    Depending upon how hot your grill is (as all grills are different) allow shrimp to cook 10-12 minutes (until firm).
    Remove to serving platter.
    I served with Faro with Aparagus (recipe coming soon), burnt broccoli and my Berry Nut Salad. Oh and some Porter House Steaks and Chicken Kebabs too!
