I am not sure how this all started but I have had this pre-occupation with smoothies and smoothie bowls since last summer. So refreshing and filling, the perfect compliment to a hot summer day! It’s like eating dessert for a meal! The only issue is that this love for smoothies and bowls has turned into a year round love of mine and let me tell you that if this happens to you be prepared to to bundle up with a nice cozy blanket when enjoying during the winter months! Brrrrr…for me it’s worth being chilled all day or night! I love sprinkling my bowls with different topping…granola, fruit, nuts, coconut flakes, chia seeds….the possibilities are endless!
1 1/4 cup frozen spinach
1 frozen banana cut in pieces
1 tablespoon peanut butter (optional, I use Better n Butter)
6 or so mint leaves
1 cup cashew milk ( or any milk or water of your choice)
2 tablespoons raw cacao nibs or dark chocolate chips (I use Enjoy Life)
For”mint chocolate-chocolate chip” add 2 tablespoons good cacao powder
For added protein add a cup of greek yogurt before or after blending…all you need to do is adjust the liquid content a bit…add liquid a little bit a time to achieve desired smooth consistency.
Place all ingredients except cocoa nibs (or chips) in blender and blend until smooth and creamy.
Add 1 tablespoon of nibs or chips and pulse for a few seconds.
You may need to add a drop more liquid if it’s too thick!
Sprinkle with the rest of the cocoa nibs or chips.
Of course you can add any other toppings…granola, fruit, coconut, chia, dark chocolate chips etc.
Just one more pointer…any smoothie bowl can be made into a smoothie, just add more liquid and vice versa! So refreshing on a warm summer day!
