• Shrimp with Northern Beans & Spinach


    Shrimp + Easy + Nutrient Rich = This Dish! Even though its summer time and BBQ season, there are those rainy days when you want to make something quick and easy and in doors! This recipe is sure to please a crowd and is loaded with protein and is delightfully flavorful! A great one pot meal that has very few ingredients. It’s always been a family favorite any time of the year!

    • 1 lb. cleaned shrimp. tail off
    • 1-1 1/2 jars Raos marinara sauce
    • 2 cloves minced garlic
    • 2 tablespoons olive oil
    • salt and pepper to taste
    • 2 -14 oz. cans northern beans, rinsed and drained
    • 10 oz. fresh baby spinach
    • 1 tablespoon fresh basil, chopped (for garnish)
    • fresh parmesan cheese (optional)


    Place cleaned shrimp in a bowl, season with salt and pepper to taste.

    Heat a large saucepan over medium heat. Add olive oil.

    Using tongs, add shrimp one at a time to pan. Cook for 2-3 minutes per side, until pink.

    Add garlic to pan. Add marinara sauce, lower heat a bit and stir. Add beans and stir again. Cook for 2-3  more minutes until well heated and add spinach. Stir until spinach wilts.

    Remove to serving dish. Sprinkle with fresh basil (optional) and serve.

    Sprinkle with parmesan.
