I made this salad on a whim and it turned out just scrummy! Didn’t feel like fussing much and was craving zucchini noodles. I usually cook them slightly but was not feeling inclined to do so, so just threw them in a bowl, chopped them slightly, added some other raw fresh veggies, chick peas, lemon, olive oil, feta & oregano and was delighted as to how fresh my salad tasted! Super clean, low fat, low carb and delicious all in a bowl! And the clincher….QUICK….didn’t take more than 10 minutes from start to finish!
