This is so super easy and looks like it took a lot longer than it did. Literally, 5, maybe 10 minutes from start to finish! Aside from being extremely healthy, it makes for such a satisfying breakfast, lunch or light dinner. Crunchy multi grain toast, topped with nutritious chunks of avocado, topped with scrambled egg whites, a dusting of crumbled feta and sriracha hot sauce (optional), it’s just scrumptious! Try it, you’ll like it!
1 cup liquid egg whites or 4 egg whites
1 or 2 slices of your favorite multi-grain bread, toasted
1/2 avocado, cut in chunks
drizzle of olive oil
1 tablespoon crumbled feta cheese
pepper to taste
drizzle of sriracha sauce (optional)
Toast or grill bread until crunchy.
Cut avocado in chunks.
Scramble eggs in non stick pan, coated with cooking spray.
Place toast on plate, top with avocado. Drizzle with olive oil.
Place scrambled eggs on top and sprinkle with feta cheese.
Season with black pepper and drizzle with your favorite hot sauce or sriracha (optional). Feel free to leave off the cheese too, it’s still quite delicious!
