I was so in the mood for cauliflower pizza but truthfully didn’t feel like going through the whole process of “ricing” the cauliflower, squeezing the water, waiting for it to bake etc… and remembered that when I was in Trader Joes the other day I found the most amazing new product….frozen cauliflower rice! Of course I bought every bag they had in stock and stuck it in my freezer! I was also hungry and wanted to make something quick so this is what I did! It turned out way better than expected and honestly tasted like I was eating a delicious bar pie! All fresh ingredients and low in fat, carbs and calories to boot!
1 cup cauliflower, riced
1 1/2 cups liquid egg whites
Grapeseed oil cooking spray
1 handful mushrooms, sliced
1 small handful fresh baby spinach
1 roma tomato, sliced
1 teaspoon Italian seasoning
3 tablespoons shaved parmesan cheese
pepper to taste
chili flakes (optional)
Preheat oven broiler.
Spray a large non stick pan with grapeseed cooking spray (it has a high heat index) and heat pan over medium high heat.
Add the riced cauliflower to the pan and cook for 1-2 minutes. Spray the pan again with cooking spray.
Pour egg whites into pan, swirl eggs around and let them to set. Sprinkle eggs with Italian seasoning and season with black pepper.
Once bottom of eggs are browned (about 3 minutes) place pan under broiler for 1-2 minutes.
Remove from broiler and place spinach on top of eggs. Scatter mushrooms on top, then tomatoes and sprinkle with shaved cheese.
Return to broiler for 2-3 minutes, until cheese is bubbly and top is golden brown.
