• Shrimp Avocado Salad

    Shrimp and Avocado remind me of summer and when it begins to get warm I start craving light, satisfying meals! This one definatly takes the cake when it comes to light, filling, healthy and quick! You must make this ASAP! Great for lunch, dinner or summer BBQ appetizer! I served it over a salad of crisp romaine and kale and used the extra dressing to dress the salad! Arugula would be nice too! The creaminess of the avocado along with the hint of dressing, the bite of red onion and the zesty-ness of the lemon makes this a real winner. Not to mention how amazing this would be stuffed into a sandwich of a nice crusty whole grain baguette.

    Ingredients:

    • 1 lb. large to jumbo shrimp, boiled*
    • 1 large avocado or 1 1/2 small avocados, cubed
    • 1 heaping tablespoon red onion, finely chopped

    Dressing:

    • 1/4 cup olive oil
    • 1/4 cup red wine vinegar
    • 1 lemon, juiced
    • 1/2 teaspoon garlic powder
    • 1 teaspoon dried parsley
    • 1 teaspoon dijon mustard
    • salt & pepper, to taste

    Directions:

    * Boiling shrimp- Fill pot with water and heat over high heat.

    Add shrimp to water and once water begins to boil lower to medium heat and cook shrimp for 3 minutes, until the shrimp turn pink. Do not over cook!

    Drain in colander and immediately put in a bowl filled with ice and water to prevent the shrimp from continuing to cook.

    Remove shrimp from ice bath and place in refrigerator for 1 hour.

    Once the shrimp are cold, cut them into half or thirds depending on size of shrimp. Place into large bowl. Add onion and cubed avocado.

    Mix dressing ingredients into jar or measuring cup and shake or whisk until combined. There will be extra dressing which you can save or use want to dress your salad.

    Spoon 3 tablespoons of dressing over shrimp & avocado and gently toss. Season with salt and pepper, to taste and serve! Spoon ov
