• Spaghetti Squash Boats with Turkey Sausage and Spinach

    Now that it’s spaghetti squash season I thought I would share this super easy low fat, low carb, tasty, healthy recipe! You can definately switch it up by using chicken sausage with spinach or kale and honestly I probably would have used kale since it’s my favorite, however my hubby is not a fan. The combination of the flavorful sausage with spinach when combined with spaghetti squash is sure to satisfy the hungriest of eaters!

    Start with the squash….

    after you microwave, cut in half…

    remove seeds and place on baking sheet, drizzle with olive oil, season with salt & pepper and roast..IMG_5021

    while the squash is roasting, brown turkey and add sausage seasoning (if you are not using turkey sausage that is… I added my own seasoning because I didn’t have sausage in the house but quite frankly I would use store bought turkey or chicken sausage)…

    add spinach…

    cook until it wilts…

    remove squash from oven…

    scrape strands of squash and add to turkey & spinach and cook over medium heat…

    scoop into “boats” and serve…

    Ingredients:

    • 1 medium to large or 2 small spaghetti squash
    • 1 1/4 lb. turkey or chicken sausage (removed from casing) or lean ground turkey or chicken breast and you can add your own sausage seasoning (I used the latter and made my own sausage seasoning blend)
    • 2 big handfuls spinach (or kale)
    • 2 tablespoons olive oil
    • salt & pepper to taste
    • 2 tablespoons pine nuts, roasted (optional)
    • fresh grated parmesan cheese (optional)
    • 2 tablespoons chopped fresh or dried parsley

    Directions:

    Preheat oven to 400 degrees.

    Place squash in microwave for 4 minutes to make it easier to cut in half.

    Cut squash in half, remove seeds and place on baking sheet.

    Drizzle with olive oil and season with salt and pepper to taste.

    Roast in oven, cut side up for 45-50 minutes.

    Remove from oven and let cool until you can handle it without burning your fingers!

    Meanwhile, in a large saucepan over medium heat, add olive oil and and turkey or sausage (see below if you are making your own seasoning*). Allow the turkey to cook while breaking it apart with a wooden spoon, about 10 minutes, until it is nice and browned.

    Add the spinach to the turkey and cook a few more minutes until wilted. Remove pan from heat.

    When the spaghetti squash is cooled, using a fork, scrape the stands of squash carefully not to damage the skin. Transfer the strands of squash to the pan with the turkey and spinach and cook for 5 minutes over medium heat until well heated. Season to taste with salt and pepper.

    Using the squash shells as  “boats” add the mixture to each shell, sprinkle with pine nuts and cheese (optional). Sprinkle with parsley and serve.

    *Sausage Seasoning Blend:

    • 1 teaspoon salt
    • 3 teaspoons paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon fennel seeds
    • 1 teaspoon pepper
    • 1/4 teaspoon chili flakes (for spice lovers only)

    Combine all in bowl and mix with ground turkey before browning or you can also sprinkle on turkey when you put turkey in the pan.
