• Mushroom Frittata de Provence


    I was in a mushroom kinda mood and so this is what happened! Great for breakfast, lunch or dinner with a side salad! The herbs de provence add a really nice flavor!


    chopped shallots go in the pan…


    then the shrooms…


    egg whites go in, season with herbs de provence…


    place under broiler…


    and serve, it’s that simple…


    hot sauce only for the daring…



    • 1 1/2 cups egg whites
    • 1 small shallot, chopped
    • 7-8 (or as many as you like) baby bella mushrooms, sliced
    • 1 teaspoon herbs de provence
    • olive oil spray
    • salt & pepper to taste


    Preheat broiler

    Spray a large non stick pan with olive oil and heat over medium high heat.

    Add shallots and cook for about 2 minutes, add mushrooms, season with salt and pepper and continue to cook for about 3 minutes until browned.

    Spray a little more olive oil on pan. Pour egg whites into pan and swish around until pan is coated. Allow eggs to cook until the eggs no longer run. Lift edges of omelette and tilt pan to quicken cooking.

    Season with more pepper if you like and sprinkle herbs de provence on frittata.

    Place under broiler for 5 minutes or until eggs are golden brown.

    Drizzle with hot sauce (optional) and serve.
