2 ripe bananas mashed

2 heaping tablespoons peanut butter (or your favorite nut butter, I use Trader Joes Better N Butter as its low in fat and sugar)
1/3 cup dark chocolate chips (I use Enjoy Life)
2 tablespoons unsweetened shredded coconut (if you have an aversion to coconut you can leave this out)
Preheat oven to 350 degrees.
In a medium mixing bowl mash bananas.
Add oats, and mix until combined.
Add peanut butter and mix well until combined.
Add chips and coconut and mix again.
Using a cookie scoop (I used a 2″ scoop), spoon cookies onto parchment lined cookie sheet.
Flatten cookies with a fork.
Bake for 25-30 minutes. Cool on a wire rack and enJOY!
