1 9oz. bag chocolate chips ( I use Enjoy Life dark chocolate morsels-see below for link)
1/4 cup shelled pistachio nuts
1/4 raw almonds
1/4 cup dried cranberries
1 tablespoon shredded coconut ( I use Let’s Do Organic-see below for link)
Line a small sheet pan with parchment paper.
Place chips in microwave safe bowl and heat for 2 minutes 35 seconds….every microwave is different so be sure to watch so that chocolate does not burn…I do it in small increments of time towards the end. I stir it often using a spatula. Once the chocolate is smooth and creamy, add the rest of the ingredients and stir until combined.
Immediately pour mixture onto parchment paper and using a spatula, evenly smooth it around. It should be about 1/4″ thick.
Place cookie sheet in refrigerator for about 1 hour, until hardened.
Using your hands, break bark into pieces. The pieces will be uneven.
Store extra in freezer in an airtight container.
